Boca Negra
12 oz bittersweet chocolate, coarsely chopped
(I suggest 60 to 70% cocoa)
1 1/3 cups of sugar
1/2 cup of bourbon (I use cognac - it's just better:-))
8 oz unsalted butter, cut into 10 pieces @ room temperature
5 large eggs, at room temperature
1 1/2 tablespoons flour
Put the chopped chocolate into a large bowl and keep at hand
Melt the sugar in cognac and bring to a boil
Add hot mixture to chocolate and mix until smooth
Add butter one piece at a time, make sure all are well incorporated
Whisk the eggs and remaining sugar until they slightly thicken
Add the eggs to the chocolate mixture and whisk until well blended
Pour the batter into a cake pan. Place the cake pan into a roasting pan
and add water. Pour enough hot water into the roasting pan to come about 1/2 in.
up the sides of the cake pan.
Bake for exactly 30 min @350 F

nonetheless it's always fun to catch up with you, and perhaps this coming spring if my publishers get their act together and i can invite to my book launch in NYC in the meantime have a wonderful holiday and dont overeat!
