well, i must say that it was indeed and very very nice dinner and many thanks to the dynamic duo Tito and miss Y! Miss Y outdid herself and i was very impressed with her, when she made me her version of Durian Gelato! i could still smell it! and it was DAMN GOOD! Miss Y must be an asian at heart! A very impressive meal altogether!

Miss Y sends her regards, Ches, and have a safe flight back home. Too bad we can't make pabaon the durian :) Next time, it'll be different, especially with this new tool just added to the mix. In NYC, there's are restrictions when it comes to using "open flame" type grills inside apartments. For the past few months, I've been looking at various ones-- the Solaire (gas/infrared), the TEC Cherokee (gas/infrared although they had a discontinued model that's electric/infrared), Woodflame Gusto (oh, if only we could use this one!) but... no can do because all use either propane gas or charcoal. But, as it turned out, there's an electric grill, made by Weber, called the Q140 that was said to be "almost" as good as a regular gas grill. And today, this grill was put to the test with some Korean marinaded shortribs, sous vide'd for 48 hours, then plopped on the grill for 10 minutes.

The basic idea behind is to use sous-vide to cook "inside" and very little or none of the flavors of the meat is lost. After 48 hours, all the tough connective tissue you would find in a low grade cut of meat, turn to collagen/gelatin. In a way, sous-vide can be thought of as a very precise way of poaching or braising. Then we have the grill which, as we all know preserves and improves much of that "outside" flavor... and "outside" is what sous-vide doesn't do very well! In effect, cooking this way, we combine two very good ways and the result (modesty aside) was the best tasting Kalbi I've ever had! :D

There are excellent Korean ready-made marinades in bottles in Korean grocery stores here.

They look like this:

Above is for Kalbi (beef ribs). Try also je yuk bokum (pork belly).

OK, these bottled ones cannot compare to a proper, marinated-from-scratch-stuff that a friend's mother-in-law (only speaks Korean) makes like her bulgogi which is sweetened using only Korean pears. But for this Korean food lover, the bottled short-cuts are heaven-sent!

The Koreans also do it with unmarinated short ribs. Make sure the beef ribs is fresh. Just wrap the cooked kalbi in lettuce (some put raw garlic which I love) then dip it in sesame oil with salt and pepper. You can also add this sauce:

Those thick chili paste are sweet-spicy, not total bombs like those South American chilies :devil: but it is best washed down with

I have resolved to stop Googling stuff you post on WS.

I read up a bit on sous-vide cooking and I now have at least 8 tabs open on my browser about vacuum packers and thermal immersion circulators. Masubukan nga sa Vienna sausage!

Oh my, walang katapusang gastos!

My sisters in law are in SG now and my suking camera shop has extended a sweet, sweet deal on a full-frame D-SLR + lenses. As for my net worth, well, when you hit rock bottom, you can start digging. :D

Russ, appreciate the tip for the marinade, I'll look for it in Koreatown, it should be better than the one I buy from our local Chinese grocery :D As for je yuk bokum, I haven't tried that! My old office used to be a 5 minute walk from 32nd St and I've been to 90% of the restaurants there but haven't seen that in their menus. I'd definitely check out recipes for this as well.

As far as my favorite Korean restaurant in NY, there was an eat-all-you-can BBQ joint in Flushing called Dawado (now called Picnic Garden, if I'm not mistaken) where for $15, you get to pick from their raw foods buffet then grill it yourself in your table while they gave you an endless supply of lettuce to wrap your meats. Back to that sous-vide'd/grilled ribs, remember when we had the short rib rendang at Fatty Crab? Then imagine a thin crunchy exterior where the connective tissue between the meat and bone is crispy :P Okay enough, I'm salivating myself :lol:

The path to least resistance to do sous-vide is to try the PIC controllers at auberins.com. You can attach your rice cooker to this to monitor the temp of your water bath. Here's a good video on youtube--



Oh and those PIC controllers cost about the same as a lens. So just ask that camera shop to remove one lens from the kit you're buying ;)

I now have a new mission: hunt for sous-vide capable restaurants in Dubai.

Tito, I can just imagine the hassle I'd have to go through with Dubai customs next time I fly from NYC. With a 270cm Damascus Gyuto (and maybe a Yanagi), a thermal immersion circulator, and a vacuum packer, they may think I'm Yakuza putting up a meth lab. I should be careful not to lose any fingers. Nor should I get drunk in a henna salon.

If I also bring a D-SLR with portrait and macro lenses, the police will add pornography to my list of charges. And thus far, I'm assuming that they won't ask about the 5kg of take away pulled pork from RUB.

All I need is to hire a Jewish lawyer to defend me and we'll have a circus with lots of clowns and me as honorary elephant. No offense meant for the stately elephants. :rock:

Tito, road trip to Edmonton? Scenic drive through Manitoba and Saskatchewan. :D I wonder if sous-vide will work unde the hood!

Kung may Stereophile show sa NY, I'll try really hard to go there for sure. Di pa ako nakarating sa New York. I should start practising my fogedaboutit.

I call tell the Tito and Yelena are having a lot of fun with their newfound hobby. This is better than working out together and pushing/spotting each other to do better.
