The plinth size is dictated by the length of tonearm or the number of tonearms to be installed. IMHO the size has little or no effect to the sound.
The mass, anchoring and material does affect sound. I have personally tried different materials (wood, plywood, acrylic, lead, marble, granite, rubber, particle) with controlled comparison. Using same or identical arm/cart combi/301/401 combi with only the plinth as the variable. I really took my time in the testing/listening. Well I am sticking to solid wood+industrial void-free plywood with glue, screw and clamp construction

By making exact tight fitting cutouts (glove fit) mass and a "solid" structure can be created. I also found using a single material without reinforcement does not sound good. I am currently working on a granite/wood/plwood/brass rek-0-kut ...with the complicated construction, I don't consider this a granite plinth
IMHO Wood also looks GREAT!
